Sunday brunch might just be one of my favorite times of the week. Even more special is when I take the time to cook a special meal at home. No waiting in lines, lots of sun light and my own favorite recipes. A white Ecco Domani Pinot Grigio inspires me to create something crisp and elegant, and what is more easy to put together than Sangria? The perfect upgrade to my Sunday Morning and the perfect way to toast the final day of the weekend.
After salivating over my friend’s quinoa and egg breakfast, I knew I needed to recreate this fresh combo. Just cook up some quinoa (or reheat some leftovers from dinner the night before) and add some fresh tomato and basil.. I love to also add a touch of homemade balsamic dressing to the quinoa to give it a little bit of a flavor kick. Top it with an egg (any style )and you have a light and delicious meal. As we know, no brunch is complete without a signature drink. This time I crafted a savory twist on Sangria. Check out the recipe below. It is a crisp, simple addition to my meal.
Savory Cucumber and Citrus Sangria
Ingredients
4 lemons / sliced
6 limes / sliced
2 small cucumbers / sliced
1.5 cup fresh basil leaves / slightly chopped
1.5 cup fresh mint leaves
2 bottles of Ecco Domani Pinot Grigio
1 small bottle sparkling water / optional
Extra large pitcher
Directions
Combine sliced lemons, limes, cucumber, basil and mint in extra large sized pitcher (It will make it easier to stir your ingredients!). Muddle slightly with a large spoon to release some of the great flavors in the fruit and herbs. Add in both bottles of Ecco Domani Pinot Grigio wine. Stir the mixture and chill for 1 hour. I like to leave mine in the fridge for a few hours to really let the flavors combine. When ready to serve, grab the Mason Jars. I love the rustic and laid back feel of Mason Jars. Don’t you? So grab a jar and pour to your hearts content, garnishing with a stem of mint. Optional: If you want to add some bubbles to your sangria, add a splash of sparkling water to your glass when serving. If you aren’t into the savory element of this recipe, feel free to add in some sugar, agave or flavored orange liquor for a sweet pick me up to this fresh sangria.
